I know, I know Easter was a few weeks ago now and here I am posting a recipe which uses hot x buns! However, if like me you are rather fond of them, then you may well have stored some in the freezer for another day!! During the build up to the Easter weekend I bought some chocolate hot cross buns which I found in the bakery department of a well known supermarket , and I was feeling hungry that day I decided to pop them in my basket to sample later at home with a cuppa. I have to be honest that the chocolate ones were not as nice as the regular hot cross buns because they were not fruity and full of spice, they were made with cocoa powder and filled with chocolate chips instead. Anyway, as I bought 2 packets I froze several of them to use at a later date.
I can tell you that chocolate hot x buns do however, make for a rather delectable brownie. Having made Malt Loaf Chocolate Brownies a while ago, I decided to use the hot cross buns to make some when I needed to make some space in my freezer, and I have to admit to them being very nice! And they were highly complimented by the mums and helpers at the toddler playgroup I help out at.
here
- 1 jar of chocolate spread (your choice of brand and flavour but I use Tesco value)
- 100g self raising flour
- 2 eggs
- 2 tbsp orange marmalade
- 4 chocolate chip hot cross buns
- 100g white chocolate
- Pre heat the oven to 180oC / 160oC (fan)
- Line a brownie tin (mine is 7 x 7 inches) with greaseproof paper
- Put the chocolate spread, marmaladeflour and eggs into a bowl and beat together until the mixture becomes smooth
- While this is happening , break up /cut the hot cross buns into large crumbs and add to the brownie batter and then mix through
- Pour into the brownie tin and smooth over the top
- Place in the oven and cook for 25-30 minutes
- Remove and the brownie should still have a slight wobble to it
- Allow to cool in the tin before removing
- Melt the white chocolate and then drizzle over the cooled brownie
- Then cut into squares and enjoy!
