One of my favourite feature length animated films as a child was The Lion, The Witch and The Wardrobe. My brother and I used to watch that cartoon over and over again and I enjoyed reading the book many times during my childhood also. Even now as an adult I am enchanted by the idea of discovering a hidden mystical far away land by walking through a wardrobe!
Using the story as inspiration I have created Turkish Delight Snowy Road. The idea came about from remembering how much Edmond was entranced by the white witch’s turskish delight and it was that delicious sweet, mixed with promises made by the witch, which encouraged Edmond to betray his brother and sisters and Aslan. Rocky road is a favourite sweet treat of mine, and I thought that if I made it using white chocolate (for snow), turkish delight to add the delicate rose scent and flavour and dessicated coconut as garnish to look like snow flakes, it could look a bit like it came from Narnia?? Well, I can but try!
The taste is sooo good – sweet yes but the jelly texture of the turkish delight addded a lovely chewiness and the rose flavour took away the sweetness as did the coconut.
Here is how I made Turkish Delight Snowy Road
To make this Narnia inspired rocky road please read on
(Makes 16 squares)
Ingredients
200g coconut biscuits
300g white chocolate
3 tbsp golden syrup
125g unsalted butter
100g marshmallows (I used pink and white ones)
100g rose scented turkish delight
dessicated coconut for garnishing
Method
Grease and line a deep baking tin – I used a 2lb loaf tin as I like my rocky road thick but you could use a 9inch square pan. Pour some dessicated coconut into the bottom of the pan and put to one side
Bash the biscuits (I do this with a rolling pin in a freezer bag covered with a tea towel) to crush them and make crumbs – note they don’t need to be uniformed like when making a cheesecake I like to have some bits bigger than others. Leave to one side
Cur your marshmallows in half using scissors, and your turkish delight into four and put both to one side
Place the chocolate, syrup and butter into a saucepan and heat gently to melt all the ingredients together
Remove from the heat and stir in the biscuit crumbs, marshmallows and turkish delight until everything is covered in the sticky chocolate sauce
Pour the mixture into your greased baking tin and then cover the top of it with some more dessicated coconut.
Place in the fridge for a couple of hours to set before removing from your tin and cutting into slices, and then cut the slices in half and enjoy!
