When I was a child and went to birthday parties, a cupcake that would always makes an appearance were butterfly cakes. These dainty little fairy cakes always remind me of my childhood and yet I have never made any myself. With Mother’s Day fast approaching I thought some butterfly cakes would make a wonderful addition to a teatime treat for my Mum and, weather permitting, to enjoy a cake and a cup of tea sat outside in her garden would be bliss.
My butterfly cupcake recipe is very easy to make and I have added a little twist by adding some pink food colouring to the cake batter to make the finished cakes a pretty pastel pink colour, and I also added some raspberry jam to the buttercream to give that a pinkness too.
Makes 15
Ingredients:
250g unsalted butter
250g caster sugar
250g self raising flour
4 eggs
1 tube of vivid pink food colouring gel
140g unsalted butter
280g icing sugar
2tbsp milk
1 tbsp raspberry jam
Method:
pre-heat the oven to 180oC / 160oC fan
cream together the butter and cream until soft and pale
add the eggs one at a time and beat until well combined
sift and then fold in the flour until well combined
add the pink food colouring and mix to ensure even coverage
divide the mixture between your muffin paper cases
cook in the oven for 20-25 minutes
once removed from the oven allow or cool completely on a wire rack
For the butter icing:
beat the butter in a large bowl until soft
carefully add the icing sugar in 2 batches and beat until smooth
add the milk and beat again
then stir in your jam until the buttercream turns pink
Making your cupcakes into butterfly cakes:
Once the cakes are completely cooled down, remove a small circle, about 2.5cm width, from the top centre of each cake
Then pipe your buttercream into each hole
Once each cake has had buttercream added to it, simply slice each circle that was removed in half and add the two halves back to the centre at a slight angle to make wings, so that a line of buttercream looks like the body of the butterfly.
I had some edible butterfly transfers which I also added to the top of each cake
Then simply serve outside in the sunshine for a perfect afternoon tea treat
I think that butterfly cakes would be a perfect Mothers Day cupcake to surprise any Mum with : made with love for the Mum you love.
