I had a bag of these
and wondered if I could use them in a muffin.
The answer: yes!!!
To make them you will need:
(makes 6 so to make more just double the amounts)
100g caster sugar
100g unsalted butter
2 eggs
100g self raising flour
2 heaped tsp peanut butter
chocolate toffee popcorn (2 or 3 per muffin)
Then you need to
Pre heat the oven to 180 oC/160 oC fan
Beat together the butter and sugar until soft and creamy
Add the beaten egg and flour and mix well
Mix in the peanut butter
Divide the mixture between 6 muffin paper cases
Add 2 or 3 of the popcorn pieces into each muffin
Place in the oven and cook for about 25 minutes (or until cooked all the way through)
Allow to cool completely before enjoying with a lovely cup of tea!

Wow, these look delicious, there should be a law against deliciousness like this to be posted without it jumping straight from the photo into my hand 😉 I’m too impatient (and perhaps a bit lazy) to bake, plus I may be the only person in the world who has never baked a successful muffin (ever!), marble cake on the other hand…

oh my God Jenny…they are sooooo bad! so what happened to the rest of the popcorn, hmmmm. I nearly bought some of these as all the bags were on offer in Asda…I stopped myself though! Might have to make some for the kids though…. Thanks for linking up! x
