I have never made chutney before but having sent the tweets between @theboyandme and @jessies_online discussing different ones to make I decided to give it a go and become a fellow chutney chum.
This recipe is taken from the BBC GoodFood website but unlike the method given , I decided to make mine in my slow cooker to see if it could be done. as it turns out it can but it does take longer but its ideal if you doubt have the time to stand over it but can just leave it to cook while you check on it every now and then.
Cranberry & Apple Chutney
Ingredients:
1 kg cooking apples
500g eating apples (I used Gala)
450g onions
50g root ginger
1 tsp peppercorns
500g granulated sugar
250ml cider vinegar
500g fresh cranberries
Method:
*peel all the apples and chop into small chunks
*peel and finely chop the onions and ginger
*place all the ingredients apart from the cranberries into your slow cooker (I have a large one if you have a normal sized one you would need to halve the recipe)
*turn to high, put on the lid and wait for the sugar to dissolve then give it a good stir
*keep on high with lid on until the mixture starts to bubble and come to the boil
*once it has been bubbling (about an hour), remove lid and leave to simmer uncovered until the apples and onions are tender. you will need to stir every now and then although not essential as it doesn’t burn. i would say that it took about 3-4 hours for the apples and onions to soften and the liquid to reduce and thicken.
*then add the cranberries and you need to continue on high without the lid for about an hour or so until the cranberries are soft but haven’t burst
*in total I would say that the chutney took about 6 hours to make in the slow cooker
*add the hot chutney to your sterile jars and seal
These ingredients made this many chutney filled jars
Now I am hoping that these will make nice gifts for Christmas but as you can see my jars need pimping in a festive yultide way, so to do this take one plain looking jar of chutney
Add some festive cello wrap,
(red tie included)
and a star shaped red tag and you have a Christmas Chutney Gift
