Hey cake fans!
Seeing as though February is the month for Valentine’s Day I thought that this months I Love Cake theme may aswell be
ROMANTIC
So as usual please link up any type of cake which has a romantic flavour, decoration, shape or maybe it is just made with love for someone special!

Romantic Red Velvet Cup Cakes
Ingredients For The Cakes:
4oz unsalted butter, softened
10oz caster sugar
2 large eggs
1 heaped tbsp cocoa powder
2 tbsp red food colouring (I used Dr Oetker)
10oz plain flour
1 pinch salt
240ml vanilla yogurt
1 tbsp white wine vinegar
1 tsp bicarbonate of soda
For The Topping:
3oz unsalted butter, softened
6oz icing sugar
6oz icing sugar
1 tub full fat cream cheese

Makes 16 muffins or 36 cupcakes (approx)
Pre-heat the oven to 190oC/170oC
Cream together the butter and sugar until pale and creamy
Add the eggs and mix well
In a small separate bowl blend the cocoa powder and food colouring together to form a paste
Add the paste to the cake batter and mix until blended
Add the sifted flour, salt and yogurt to the cake mix and again mix
together thoroughly
In another separate bowl mix the bicarb and white wine vinegar together
with spoon and then add this to the cake batter and give it all a good mix again.

Add the sifted flour, salt and yogurt to the cake mix and again mix
together thoroughly
In another separate bowl mix the bicarb and white wine vinegar together
with spoon and then add this to the cake batter and give it all a good mix again.
Spoon the batter into paper cases filling them about 2/3 full
Place in the oven and cook for about 12-15 mins for cupcakes and for 18-20 minutes for the muffin – i always insert a knife to see if they are cooked
Allow to cool thoroughly
Meanwhile make the frosting for the topping by
Mixing the butter and icing sugar until reasonably soft and then add the cream cheese and continue to mix until blended together and soft and creamy
Once the cakes are completely cool, decorate with the frosting and then top with whatever you like. I chose some Valentine inspired decorations and used some love heart sweets and wafer flowers and the end result looked like this
