Rio Olympics BBQ Meatball Kebabs

Ingredients
  • 1 sachet of Schwartz Grill Mates Brazilian BBQ Smoky & Zesty Marinade Mix
  • 50ml oil
  • 12 Beef meatballs
  • 1 large yellow pepper
  • 1 large green pepper
  • 4 pitta breads
  • lettuce leaves
  • sour cream for dressing (optional)
  • 4 skewer sticks
Instructions
  1. Light your BBQ - I used a disposable one which takes about 20-30 minutes to heat up and be ready to use
  2. Meanwhile mix the Schwartz spice mix with the oil in a large bowl and add the meatballs and stir to coat them all
  3. Cover with cling film and place in the fridge for 20 minutes
  4. Chop the peppers into chunks - slightly larger than bite size is how I cut them
  5. Once the BBQ is ready, assemble your kebabs by placing 3 meatballs and 4 pieces of pepper (2 of each colour) on to each skewer - see photos below
  6. Place onto the BBQ and cook for approx 15-20 minutes (as per the meatball cooking instructions), turning every 5 minutes so the meatballs get evenly cooked
  7. A few minutes before they are ready, heat your pitta breads in your toaster, cut them open and fill with your salad leaves
  8. Then fill each pitta with some peppers and meatballs, and add some sour cream if you like
  9. (I made 12 serve a family of 4 - 2 each for the boys, 3 for me and the remainder for the OH!), but if your family are larger or eat more, then cook enough meatballs as your require.
