Bread Bolognese

Ingredients
  • 1 tbsp oilve oil
  • 6 slices of wholemeal bread, cut into small cubes
  • 1 red pepper, chopped
  • 2 carrots, peeled and chopped finely
  • 1 onion, peeled and chopped finely
  • 1 oxo cube
  • 1 x 400g can chopped tomatoes with herbs
  • ½ mug of white wine (only because I had some that needed using up, otherwise use hot water)
  • 1 x 400g can baked beans (optional, not something I normally add to meaty bolognese but i had some in the cupboard!)
  • 1 tsp garlic granules
  • 1 tsp oregano (dried)
  • 1 tsp basil (dried)
  • black pepper for seasoning
  • *To serve*
  • pasta of your choice
  • grated cheese
Instructions
  1. heat the oil over a moderate heat and add the onions and carrots and cook for 5 minutes until softened
  2. add the peppers and garlic and herbs and stir, and cook for a few more minutes
  3. add the bread and the oxo cube and mix again
  4. add the tomatoes and baked beans (if you choose to use them) and white wine and bring to the boil
  5. then reduce the heat, add a lid and cook for 40-45 minutes until the carrots are soft remembering to stir occasionally to avoid it drying out/sticking to the bottom of the pan
  6. serve with your choice of pasta
