THIS MAKES 2 LOAF CAKES - TO MAKE 1 JUST HALF THE QUANTITIES
Ingredients
150g porridge made with 1 mug of chocolate chai latte (using 3 heaped tsp)
150g self raising flour
2 eggs
3 mars bars
150g unsalted butter
1 tbsp chocolate chai latte
1 over ripe banana
100g sultanas
*For the frosting*
1 mars bar
100g milk chocolate
1-2 dsp chocolate spread
Instructions
Pre heat the oven to 160oC / 180oC (fan)
Grease and line 2 x 1lb loaf tins (or 1 x 2lb!)
Boil your kettle and remove the lids from the Moma instant porridge cartons
Make a mug of Drink Me Chai Chocolate Chai Latte as per the instructions on the tub (but I added 4 tsp of the drink instead of the suggested 3)
Then using your now prepared mug of drink Me Chai, use this to make the two porridge portions as per the instructions on the porridge cartons. Leave to stand once made and stirred with the lids back on (again as per the instructions)
Meanwhile, gently melt the butter and mars bars in a non stick pan, stirring occassionaly until melted and stir well to get rid of any mars bar lumps
In the bowl of a free standing mixer (or in a bowl and use a wooden spoon or hand whisk) pour in the flour, chai latte powder beaten eggs, porridge, banana, raisins and mars bar mixture and mix well to make the cake batter - being careful not to over mix it
Divide the mixture between the two loaf tins (or one large one) and smooth over the top
Place in the oven and cook for about 25-30 minutes until cooked right through
Leave to cool
Meanwhile make your frosting by:
melt the chocolate and mars bar together - take care not to burn the chocolate as the caramel from the Mars Bar can burn easily
Then allow to cool for a few minutes, then add the chocolate spread and beat to make a smoothish frosting
Once the loaf cakes are cooled completely spread the frosting over the top of each one
then serve
You can freeze the spare cake (which is what I did)
