Christmas Pudding Tiffin

Ingredients
  • 100 g unsalted butter
  • 3 tablespoons golden syrup
  • 2 tablespoons drink me chai latte powder
  • 150g of brandy snaps
  • 50g digestive biscuits
  • 200g leftover and cooked Christmas Pudding, broken up into pieces
  • 200g milk chocolate milk
  • Square tin, approx. 18cm x 18cm, lined baking paper
Instructions
  1. Place the butter, golden syrup and chai latte drink powder in a pan over a gentle heat and melt together
  2. Bash the brandy snaps and biscuits in a sealed sandwich bag with a rolling pin into small pieces - NOT crumbs
  3. Add the biscuits and Christmas pudding into the melted butter mixture and stir to combine it all together
  4. Pour the mixture into the prepared tin and leave to cool for about an hour
  5. Melt the chocolate either in the microwve at 30 second bursts or in a bowl over a pan of simmering water
  6. Pour the chocolate over the tiffin base and smooth over the top
  7. Place in the fridge to set for a couple of hours
  8. Cut into squares and keep in a sealed container in the fridge or a cool place - YUM!
