Whole Orange Chocolate Cake

3 layered sponge cake filled with a tangy cream cheese frosting

  • juice of ½ orange

  • 4 segments of a chocolate orange, grated
Instructions
  1. Place the orange in a pan and cover with boiling water and boil for 30 minutes until the skin softens. Be careful not to allow the pan to run out of water
  2. Once softened remove from the pan and allow to cool until just warm to the touch
  3. Pre-heat your oven to 180oC / 160o C (fan) and grease and line 3 x 8 inch diameter cake tins
  4. Slice the orange in half and remove the pips. Place the pipless orange into a processor or blender and blitz to make a chunky textured orange sauce. I only had a blender so I added my eggs here to make it easier to blend the orange and produce a sauce.
  5. Place the Stork (or fat alternative) and sugar into a bowl and beat together until pale and creamy.
  6. Add the eggy orange mixture and beat again for a couple of minutes.
  7. Fold in the sifted flour and cocoa powder and mix until just combined being careful not to over beat.
  8. Divide the cake batter between the 3 tins and then cook in the oven for about 20-25 minutes until cooked all the way through
  9. *Frosting*
  10. Place the butter - best used at room temperature - into a bowl and beat until smooth
  11. Carefully add the sifted icing sugar a little at a time until you have a smooth creamy paste
  12. Add the cream cheese and orange juice and beat again until you have a smooth frosting.
  13. Place in the fridge , covered, until you are ready to use it.
  14. To assemble:
  15. Layer the sponges with the frosting and on the top layer sprinkle the chocolate orange over the frosting
