Ingredients
  • 200g unsalted butter
  • 175g caster sugar
  • 4 eggs
  • 1 tsp vanilla essence/extract
  • 200g self raising flour
  • food colourings - I used pink, red , yellow and orange
  • *topping*
  • 75g icing sugar
  • cold water
  • pink food colouring
  • edible stars
  • Party Ring biscuits
Instructions
  1. Pre heat the oven to 180oC / 160oC (fan)
  2. Grease and line a 22cm Gugelhupf Tin or if you do not own one, a similar sized bundt tin or round tin
  3. In a large bowl (I use a free standing mixer for this) beat the butter and sugar together until pale and creamy for approx 3-4 minutes
  4. add the eggs and the vanilla and beat well for a few more minutes
  5. now add the flour, and gently mix through/fold in
  6. once this is done, divide the cake batter into 4 equal -ish portions /bowls
  7. add a little food colouring to each portion of cake batter and mix in
  8. Now add dollops of each coloured cake batter into your prepared cake tin anyway you like really. You want to create a marble effect once the cake is cooked.
  9. once all of the cake batter has been used, bake the cake in the oven for 35-45 minutes until cooked right through.
  10. Leave the cake to cool before turning out onto your cake plate/serving platter and do not add the icing until the cake is cold.
  11. *icing*
  12. in a bowl, place approx 50g of the icing sugar and add a few drops of cold water to make a thick paste.
  13. to the remaining 25g of icing sugar, add some of the pink food colouring and mix well (you might need to add as speck of cold water too to make the paste)
  14. Pour the white icing sugar over the top your cake
  15. Next drizzle (either free hand or put the pink icing sugar paste into a piping bag) the pink icing over the top
  16. Then top with Party Ring Biscuits and the edible stars
  17. your Party Ring Marble Cake is now ready to serve :)
