Jammie Dodgers Traybake Cake

Ingredients
  • 200g butter
  • 175g caster sugar
  • 4 eggs
  • 1 tsp vanilla extract /essence
  • 200g self raising flour
  • 1 tube (6g) of freeze dried raspberries
  • 1 tbsp raspberry jam
  • 9 Jammie Dodger biscuits
Instructions
  1. Pre heat the oven to 180oC / 160oC (fan)
  2. Grease and line a 9 inch square tin
  3. In a bowl cream together the butter and sugar until pale and smooth
  4. Add the eggs ad the vanilla extract and beat well
  5. Fold in the flour
  6. Stir through the freezer dried raspberries.
  7. Then slowly and lightly fold the jam into the cake batter to make a swirl - you do not eat to mix it in completely
  8. Pour into your prepared cake tin
  9. Top with the 9 Jammie Dodgers
  10. Bake in the oven for 40-45 minutes until golden and cooled right through
  11. Once cold, remove from your tin and cut into squares - they are big pieces but worth it!
