Strawberry and White Chocolate Surprise Cake

- 125g butter
- 100g white chocolate
- 75g caster sugar
- 3 eggs
- 175g self raising flour
- approx 8-9 strawberries, cut in half length ways
- *Decoration*
- 50g white chocolate
- heart shaped marshmallows
- edible pink sugar crystals (or some other pink edible sprinkles)
- Pre heat the oven to 180oC / 160oC (fan)
- Gently melt the butter and white chocolate together ,leave to cool slightly
- Place the flour, sugar and eggs into a bowl ad mix well
- Pour in the melted butter mixture, and beat well to incorporate it into the other ingredients.
- Take a 22cm Gugelhupf Tin and grease it well
- Pour in ⅓ of the cake mixture into the tin
- Stand the strawberry pieces in the tin as per my photo
- Pour over the remaining cake batter and smooth over as best you can
- Bake in the oven for approx 35-40 minutes until cooked right through
- Leave to cool
- Remove the cake from your tin and turn over onto your cake plate
- Melt the chocolate and drizzle it over the cake as wildly or as neatly as you like
- Decorate with the marshmallows and pink sprinkles
