Strawberry and White Chocolate Surprise Cake

Ingredients
  • 125g butter
  • 100g white chocolate
  • 75g caster sugar
  • 3 eggs
  • 175g self raising flour
  • approx 8-9 strawberries, cut in half length ways
  • *Decoration*
  • 50g white chocolate
  • heart shaped marshmallows
  • edible pink sugar crystals (or some other pink edible sprinkles)
Instructions
  1. Pre heat the oven to 180oC / 160oC (fan)
  2. Gently melt the butter and white chocolate together ,leave to cool slightly
  3. Place the flour, sugar and eggs into a bowl ad mix well
  4. Pour in the melted butter mixture, and beat well to incorporate it into the other ingredients.
  5. Take a 22cm Gugelhupf Tin and grease it well
  6. Pour in ⅓ of the cake mixture into the tin
  7. Stand the strawberry pieces in the tin as per my photo
  8. Pour over the remaining cake batter and smooth over as best you can
  9. Bake in the oven for approx 35-40 minutes until cooked right through
  10. Leave to cool
  11. Remove the cake from your tin and turn over onto your cake plate
  12. Melt the chocolate and drizzle it over the cake as wildly or as neatly as you like
  13. Decorate with the marshmallows and pink sprinkles
