Creme Egg Meringue Nests

Ingredients
  • 4 egg whites
  • 200g caster sugar
  • 30g icing sugar
  • 4 Cadbury Creme Eggs
  • 200g milk chocolate
Instructions
  1. Preheat the oven 110oC / 100C (fan)
  2. Place the 4 egg whites into a large clean mixing bowl and beat them on a medium speed with an electric hand whisk until the mixture stands up in stiff peaks when the whisk is lifted.
  3. Turn the speed up and gradually add the sugar slowly, just a spoonful at a time.
  4. Do not over whisk!
  5. When it is ready, the meringue mixture should be thick and glossy
  6. Spoon the meringue mixture on to your lined baking tray and make 8 nests. Using the back of a spoon much down the centre of each meringue nest.
  7. Place a creme egg half into the centre of each nest
  8. Bake for approx 1¼ hours until the meringues sound crisp when tapped underneath
  9. Leave to cool on the tray or on a cooling rack.
  10. Once cold, dip the base of each meringue into the melted milk chocolate , and leave to set upside down
  11. Store in a tin with a lid until ready to serve
