Maltesers and Baileys Chocolate Layer Cake

Ingredients
  • 200g butter
  • 200g sugar
  • 160g flour
  • 40g cocoa powder
  • 4 eggs
  • *BAILEYS BUTTERCREAM*
  • 150gg unsalted butter
  • 200g icing sugar
  • 2-4 tbsp Baileys (depends on consistency of the buttercream)
  • *DECORATION*
  • Edible gold glitter spray
  • 200g milk chocolate
  • Lots of Maltesers - approx 350-400g !
Instructions
  1. Grease and line 2 x 8cm cake tins
  2. Pre heat the oven to 180oC / 160oC (fan)
  3. Cream the butter and sugar together for about 5 minutes until pale and soft
  4. add the eggs and a spoonful of the flour and beat for a few more minutes
  5. fold in the remaining flour and the cocoa powder
  6. divide the batter between the two tins and then cook in the oven for 22-25 minutes approx
  7. leave the cakes to cool
  8. while they are cooling, you can make your Baileys buttercream:
  9. Cream the butter for a few minutes to soften, then add the icing sugar and beat until soft and creamy
  10. Add the Baileys and a splash of milk to make the frosting more creamy
  11. Cut each sponge into 2 so you end up with 4
  12. Now assemble your cake:
  13. Place one sponge onto a plate/serving board and cover with some of the Baileys buttercream
  14. Add Maltesers around the edge - well outer rim really (if you want to and have enough of the Maltesers you could cover each layer completely with them )
  15. Now cover with another sponge and repeat until you get to the final and 4th layer
  16. On the 4th, top, layer, pour over the melted chocolate - it can drip down the sides that is fine
  17. After a couple of minutes, cover the chocolate completely with Maltesers
  18. For a final fun flourish, spray your cake with the edible gold glitter spray.
