2-4 tbsp Baileys (depends on consistency of the buttercream)
*DECORATION*
Edible gold glitter spray
200g milk chocolate
Lots of Maltesers - approx 350-400g !
Instructions
Grease and line 2 x 8cm cake tins
Pre heat the oven to 180oC / 160oC (fan)
Cream the butter and sugar together for about 5 minutes until pale and soft
add the eggs and a spoonful of the flour and beat for a few more minutes
fold in the remaining flour and the cocoa powder
divide the batter between the two tins and then cook in the oven for 22-25 minutes approx
leave the cakes to cool
while they are cooling, you can make your Baileys buttercream:
Cream the butter for a few minutes to soften, then add the icing sugar and beat until soft and creamy
Add the Baileys and a splash of milk to make the frosting more creamy
Cut each sponge into 2 so you end up with 4
Now assemble your cake:
Place one sponge onto a plate/serving board and cover with some of the Baileys buttercream
Add Maltesers around the edge - well outer rim really (if you want to and have enough of the Maltesers you could cover each layer completely with them )
Now cover with another sponge and repeat until you get to the final and 4th layer
On the 4th, top, layer, pour over the melted chocolate - it can drip down the sides that is fine
After a couple of minutes, cover the chocolate completely with Maltesers
For a final fun flourish, spray your cake with the edible gold glitter spray.
