Pizza Pinwheels

Ingredients
  • *For the pizza dough*
  • 500g strong white bread flour
  • 1 tsp sea salt
  • 1 x 7 g dried yeast sachet
  • 1 tbsp honey
  • 2 tbsp olive oil
  • 325ml luke warm water
  • *For the filling*
  • passatta with added garlic and herbs
  • oregano
  • pepperoni
  • cooked chicken
  • grated mozzarella
Instructions
  1. *To make the dough*
  2. Place all of the ingredients into a large bowl - I use my mixer so I use that bowl (but you can of course make this by hand)
  3. Use the dough hook attachment and mix well to form a soft dough and let the hook knead the dough for about five minutes, until it is silky smooth and elastic.
  4. Transfer to a clean bowl that has been very lightly greased with oil, cover with a damp tea towel (or clingfilm) and leave to rise for about 1½ hours, until doubled in size.
  5. Once the dough has risen, knock it back, and scatter some flour onto a clean work surface and then split the dough into two halves
  6. *TO MAKE THE PINWHEELS*
  7. Pre heat the oven to 180oC / 160oC (fan)
  8. Roll out each of the pizza doughs into an oblong shape which is not too thin or too thick
  9. Spread the tomato sauce over the base and scatter some oregano over it
  10. Add your toppings (I used pepperoni and cooked chicken)
  11. Scatter the grated mozzarella over the top
  12. Carefully, tuck in the smaller sides, and then roll into a long sausage shape ensuring that the fold is at the bottom.
  13. Repeat with the other dough half
  14. Using a knife, cut off slices approx 1-2 inches thick -you should get about 10 slices per dough
  15. Place onto a large baking tray/s
  16. Cook in the oven for approx 15 mins
