Chocolate Weetabix Squares

Ingredients
  • 4 Weetabix biscuits (I used the coconut and raisin one)
  • 125g self raising flour
  • 100g light brown sugar
  • 125g unsalted butter , melted
  • 75g raisins
  • *topping*
  • 200g milk chocolate
Instructions
  1. Preheat oven to 180 oC / 160oC
  2. Line a brownie tin approx 28cmx18cm with non-stick baking paper.
  3. In a food processor add all of the dry ingredients and blitz for about 1 minute so that the Weetabix becomes fine crumbs
  4. Add the melted butter and raisins and mix to combine
  5. Press mixture firmly into the prepared tin.
  6. Bake for 20 minutes.
  7. Remove from oven and allow to stand until cold
  8. Remove from the tin
  9. Meanwhile, melt the chocolate
  10. Pour the melted chocolate over the cooled biscuit base and spread all over
  11. Leave to cool and set and then slice and enjoy
