Jaffa Cake Celebration Cake

- For the cake*
- 200g unsalted butter
- 200g caster sugar
- 4 eggs
- 150g self raising flour
- 50g cocoa powder
- *For the buttercream*
- 100g unsalted butter
- 150g icing sugar
- 50g chocolate orange segments
- *Decoration*
- 200g chocolate orange
- Jaffa Cakes (approx 15)
- Chocolate Orange Matchmakers
- *Sponges*
- pre heat the oven to 180oC / 160oC (fan)
- grease and line 2 x 8 inch sandwich tins
- cream the butter and sugar together for about 5 minutes until pale and soft
- add the eggs and a spoonful of the flour and beat for a few more minutes
- fold in the remaining flour and the cocoa powder
- divide the batter between the two tins and then cook in the oven for 22-25 minutes approx
- leave the cakes to cool
- once the sponges are cold to the touch, make your buttercream:
- *Buttercream*
- melt the chocolate orange ad leave to cool slightly
- Cream the butter for a few minutes to soften, then add the icing sugar and beat until soft and creamy
- add the cooled melted chocolate orange and beat well
- *Assembling the cake *
- Sandwich the two sponges together with the buttercream
- Pour the melted chocolate orange over the top the cake, and allow it cool for about 2 minutes
- Now add your Jaffa cakes and Matchsticks
- Once the chocolate has set, place in the fridge to allow to set more firmly.
