Cauliflower Chilli Con Carne

- 1 cauliflower , blitzed into rice
- 2 tsp olive oil
- 1 large onion, finely chopped
- 2 peppers, diced
- 1 tin of chopped tomatoes
- 1 x 500ml jar of passata
- 1 tin of kidney beans
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp chilli powder
- 1 tsp garlic puree
- 2 tbsp dried red lentils
- ¾ of the tinned tomatoes tin filled with water
- Sauté the onion in the oil over a low heat for about 5 minutes until the onions have softened
- Add the cauliflower rice and cook for a few minutes
- Add the spices and garlic and stir well
- Add the peppers, tinned tomatoes, passata, water and kidney beans and mix well
- Transfer to your slow cooker
- Add the lentils and stir
- Cover with the lid and cook on low for about 7 hours, until the lentils are soft.
