Cauliflower Chilli Con Carne

Ingredients
  • 1 cauliflower , blitzed into rice
  • 2 tsp olive oil
  • 1 large onion, finely chopped
  • 2 peppers, diced
  • 1 tin of chopped tomatoes
  • 1 x 500ml jar of passata
  • 1 tin of kidney beans
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp chilli powder
  • 1 tsp garlic puree
  • 2 tbsp dried red lentils
  • ¾ of the tinned tomatoes tin filled with water
Instructions
  1. Sauté the onion in the oil over a low heat for about 5 minutes until the onions have softened
  2. Add the cauliflower rice and cook for a few minutes
  3. Add the spices and garlic and stir well
  4. Add the peppers, tinned tomatoes, passata, water and kidney beans and mix well
  5. Transfer to your slow cooker
  6. Add the lentils and stir
  7. Cover with the lid and cook on low for about 7 hours, until the lentils are soft.
