Unicorn Pancakes

fun American style pancakes containing edible sprinkles inside the batter .
Ingredients
  • Makes 7-8 pancakes :
  • 3 eggs
  • 140g gluten free flour
  • 1 tsp baking powder
  • 150ml milk
  • ½ tsp vanilla extract
  • an assortment of edible sprinkles - I used multi coloured stars, pink and purple hundreds and thousands and gold polka dots
  • *Decoration*
  • squirty cream
  • edible gold or silver glitter
  • more of the edible sprinkles mentioned above
  • 1 strawberry, 2 raspberries, 2 blueberries and 5 hearts shaped marshmallows
Instructions
  1. Take two bowls and separate the egg yolk from the egg white, put the yolks in one of the bowls and the egg white in the other.
  2. Into the egg yolks, add the flour, vanilla extract, baking powder and milk and beat well to make a smooth batter
  3. Then whisk the eggs until they form stiff peaks
  4. Switch on your Breville Traditional Crepe Maker - it needs about 5 minutes to heat up - and move the dial to 4
  5. Using a metal spoon, carefully fold the egg whites into the batter - I did this in 3 lots.
  6. Then add some edible sprinkles of your choice and lightly fold into the mixture, trying not to ruin the bubbles you have created!
  7. Spray the crepe maker with a little Frylight (or rub it with a sheet of kitchen towel with a little oil on it)
  8. Once the green light on the crepe maker goes off, add a table spoon of batter into the centre of the appliance, and spread slightly with the back of there spoon to make a round
  9. Cook for approx 60-90 seconds on once side, then flip over and repeat on the other side.
  10. Repeat this until all of there mixture has been used.
  11. Meanwhile, using a cake pop stick make a fruit kebab using 2 marshmallow and the fruit ensuring that the strawberry is on there top - this is the Unicorn's horn
  12. Working quickly, squirt lots of cream onto the top of the pancake stack, stick the fruit kebab into the stack, and then cover with some more edible sprinkles, edible glitter spray and some marshmallows. You need to work quickly, as the cream slides off eventually!
  13. Serve with some extra fruit if you like and enjoy a fun treat this pancake day, or indeed any day!
  14. Stack the pancakes onto a serving plate.
