Gluten Free Coconut Flapjacks

a gluten free flapjack made using a coconut and crispy rice cereal.
Ingredients
  • 250g Nutri-brex cereal
  • 50g desiccated coconut
  • 50g raisins
  • 1 medium-large over ripe banana
  • 225g butter
  • 300ml golden syrup or honey
  • (I used 200g apple and cinnamon fudge + 100ml golden syrup)
Instructions
  1. Pre heat the oven to 160oC / 140oC (fan oven)
  2. Grease and line a brownie tin
  3. Place the fudge, butter, golden syrup and banana in a large non stick man over a medium heat and gently melt together
  4. Meanwhile place the Nutri-Brex in a food processor and blitz to make crumbs
  5. Pour the cereal crumbs, coconut and raisins into the sticky sauce and mix well to coat all the dry ingredients well
  6. Pour into your prepared tin and bake for 20-25 minutes until just golden
  7. Carefully, score your flapjack portions with a knife
  8. Leave to cool in the tin before removing to a tin
