Gluten Free Coconut Flapjacks

- 250g Nutri-brex cereal
- 50g desiccated coconut
- 50g raisins
- 1 medium-large over ripe banana
- 225g butter
- 300ml golden syrup or honey
- (I used 200g apple and cinnamon fudge + 100ml golden syrup)
- Pre heat the oven to 160oC / 140oC (fan oven)
- Grease and line a brownie tin
- Place the fudge, butter, golden syrup and banana in a large non stick man over a medium heat and gently melt together
- Meanwhile place the Nutri-Brex in a food processor and blitz to make crumbs
- Pour the cereal crumbs, coconut and raisins into the sticky sauce and mix well to coat all the dry ingredients well
- Pour into your prepared tin and bake for 20-25 minutes until just golden
- Carefully, score your flapjack portions with a knife
- Leave to cool in the tin before removing to a tin
