Boost's Berry Cake Bars

Ingredients
  • 50g butter
  • 50g caster sugar
  • 50g shreddies
  • 250ml milk
  • 1 egg
  • 105g flour
  • ½ tsp bicarbonate of soda
  • 1 tsp mixed spice
  • 100g raspberries
  • 25g blueberries
Instructions
  1. Pre heat the oven to 180oC / 160oC (fan)
  2. Grease and line a square brownie tin
  3. Soak the Shreddies in the milk and leave for about 10 minutes to soak
  4. Meanwhile, cream the butter and sugar together until pale and soft
  5. Add the egg and mixed spice and beat again
  6. Mix the bicarbonate of soda and flour in a bowl together
  7. Now add ½ the shreddies mixture with ½ the flour and beat well
  8. Add the fruit to the remaining flour, and mix well
  9. Now add the final half of the shreddies mixture with the fruit and flour and mix well
  10. Pour into your prepared tin and bake for 25 minutes
  11. Once cool, remove from the tin and cut into squares - small or big it is up to you.
