Lemon, Basil and Strawberry Cake

Ingredients
  • 15g fresh basil leaves
  • 115g unsalted butter
  • 200g caster sugar
  • 2 eggs
  • 250g self raising flour
  • 100g lemon yogurt
  • ½ punnet strawberries
  • *Lemon Icing*
  • 5 tbsp icing sugar approx
  • the juice of 1 lemon
  • *Decoration*
  • sliced strawberries
Instructions
  1. pre heat the oven to 180oC / 160 oC (fan)
  2. grease and line a 1lb loaf tin
  3. Blitz your basil leaves in a food processor - I used the Ninja Complete Kitchen to do this
  4. Add the butter and sugar and beat inside the Ninja/food processor/mixer for about 5 minutes until pale and creamy.
  5. Add the eggs and beat the mixture for a couple of minutes
  6. Add the yogurt and flour and mix until combined
  7. Pour ½ of the batter into the loaf tin and place as many strawberry halves as you can along the middle standing up
  8. Cover with the remaining batter and smooth over the top with a knife
  9. Cook for about 45 - 50 minutes until risen, golden and cooked right through. You might need to cover loosely with foil after 40 minutes
  10. Allow to cool and then remove from the tin and place on a wire rack
  11. Once cooled completely make your icing by mixing the icing sugar with the lemon juice to make a thick consistency - you may need to add more icing sugar if not thick enough
  12. Then drizzle over the top of the cooled cake, and scatter the strawberry slices over the top
  13. Enjoy with a cup of tea
