Sugar & Dairy Free Date Nectar and Banana Cake

Ingredients
  • 250g Beloved date nectar
  • 225g peanut butter
  • 2 small over ripe bananas
  • 3 eggs, beaten
  • 300g self-raising flour
Instructions
  1. Preheat the oven to 160C/ 140C (fan)
  2. Grease and line a 20cm brownie tin
  3. Place the peanut butter , the date nectar and banana into a pan and melt slowly over a low heat. Once the mixture becomes a liquid, leave to cool for 15-20 minutes
  4. Add the beaten eggs into the melted honey mixture using a wooden spoon.
  5. Put the flour into a large mixing bowl
  6. Pour the liquid over the flour and beat until you have a smooth, runny-ish batter.
  7. Pour the mixture into the tin and bake for about 50 minutes until it is risen and cooked right through
  8. Allow to cool and then remove from the tine and cut into squares
