Hot Chocolate Cupcakes

- 100g self raising flour
- 100g caster sugar
- 100g butter
- 2 eggs
- 4 tbsp drinking chocolate
- 60ml milk
- 150g full fat cream cheese
- 150g chocolate spread
- (I find that the supermarkets own cheapest spread works best because it is not so sweet or nutty in taste)
- 9 large white marshmallows
- 9 pieces of flake
- pre-heat the oven to 180oC / 160oC (fan)
- gently heat the milk until just before boiling
- mix the milk with the drinking chocolate to form a thick paste and leave to one side
- cream the butter and sugar together until pale and creamy
- add the eggs one at a time with a tbsp of the flour to avoid curdling
- then fold in the remaining flour and mix
- add the hot chocolate paste and mix well
- divide between your paper cases and bake in the oven for about 20 minutes
- While cooling make your frosting
- simply place your cream cheese and chocolate spread in a bowl and mix well to make your frosting
- Once your cakes are cooled down, pipe some frosting on to the top of each one
- then top with a marshmallow in the centre and your flake at an angle
- That's is the hot chocolate cupcakes are ready to eat!
