Hot Chocolate Cupcakes

Ingredients
  • 100g self raising flour
  • 100g caster sugar
  • 100g butter
  • 2 eggs
  • 4 tbsp drinking chocolate
  • 60ml milk
  • 150g full fat cream cheese
  • 150g chocolate spread
  • (I find that the supermarkets own cheapest spread works best because it is not so sweet or nutty in taste)
  • 9 large white marshmallows
  • 9 pieces of flake
Instructions
  1. pre-heat the oven to 180oC / 160oC (fan)
  2. gently heat the milk until just before boiling
  3. mix the milk with the drinking chocolate to form a thick paste and leave to one side
  4. cream the butter and sugar together until pale and creamy
  5. add the eggs one at a time with a tbsp of the flour to avoid curdling
  6. then fold in the remaining flour and mix
  7. add the hot chocolate paste and mix well
  8. divide between your paper cases and bake in the oven for about 20 minutes
  9. While cooling make your frosting
  10. simply place your cream cheese and chocolate spread in a bowl and mix well to make your frosting
  11. Once your cakes are cooled down, pipe some frosting on to the top of each one
  12. then top with a marshmallow in the centre and your flake at an angle
  13. That's is the hot chocolate cupcakes are ready to eat!
