Disney's Frozen Snowball Cake

- 1 tub of Betty Crocker vanilla flavoured buttercream
- 1 tub of Betty Crocker vanilla flavoured buttercream
- 150g white chocolate (I used a good quality white chocolate buttons one from Hadleigh Maid)

- 100g cream cheese
- 100g cream cheese
- edible snowflakes and different sized silver covered chocolate balls (both available from Tesco)
- Pre heat the oven to 180oC / 160oC fan)
- Grease and line a 6 inch baking tin with a loose bottom
- Cream the butter and sugar together until pale and light (about 5 mins)
- Add a spoonful of the flour, 2 tps of vanilla extract and the eggs and beat well for a few minutes
- Fold in the flour and then add the blue food colouring - as much as you need to make a 'Frozen' blue coloured batter
- Pour half the batter in the tin and cook until risen and cooked right through - approx 35-40 minutes
- Once cooled, remove fron the tin, clean and re grease and line and add the remaining batter and cook again.
- Once the second sponge is cooked, allow to cool and then remove from the tin.
- Meanwhile to make the frosting:
- Melt the white chocolate and then add the buttercream and cream cheese and beat well
- Cut each sponge, when fully cooled, in half so you end up with 4 layers.
- Sandwich each one with jam and place onto your serving plate/board
- Cover all over with just enough of the frosting to cover the cake, and make it as smooth as possible
- Place the cake in the fridge for an hour to set
- Then cover the chilled cake with as much of the frosting that you need
- Decorate with the decorations
- Also add some of the frosting to the board/plate so that you can then stick the figurines into it to keep them in place.
- Add your candle and leave in the fridge until it is required.
