apple & cinnamon grahams traybake

- 125g self raising flour
- 150g unsalted butter
- 150g brown sugar (not essential as caster would be ok)
- 2 eggs
- 100g grated apple
- 25g Cinnamon Grahams + couple of handfuls for decoration
- 1 tbsp cinnamon
- 1 apple, peeled and thinly sliced
- pre heat the oven to 180o C / 160oC (fan)
- grease and line a rectuangular baking tray
- cream the butter and sugar together until pale and soft (about 5 minutes)
- Add the eggs and 1 tbsp of the flour and beat well until light and airy
- The fold in the remaining flour, the cinnamon, the grated apple and the cinnamon grahams
- Pour into the baking tin
- Smooth over and then top with the sliced apple
- Smash the remaining Cinnamon Grahams and then scatter over the apple
- Cook in the oven for approx 25 minutes until cooked all the way through
- allow to cool before cutting into 12 squares
