This fun Party Ring Marble Cake is a fun and colourful, not to mention delicious, cake inspired by the cute iced biscuits that we know and love.
During the Easter holidays, I played host to three of my boy’s cousins for the day. Knowing how hungry five children can get after a day of playing in the garden, or just hungry in general, I decided to make them a fun cake for a little afternoon treat. Owing to the fact that they all love party ring biscuits, and because I had some food colourings left over from Jenson’ s birthday cake the week before, this Party Ring Marble Cake was created.
There is nothing complicated about this cake , it is simply a vanilla sponge essentially, and made pretty to look at thanks to some food colourings, party rings, edible stars and some icing. If you do not have a tin like the one I have used, that is oak just use a regular round cake tin.
To get the marble effect, I simply divided the cake batter into 4 portions and added 4 different food colourings to each one. Then I spooned dollops of each coloured batter into the tin until it was all gone. Once baked, the effect is really striking and pretty.
It tastes delicious too!
Here is the recipe
- 200g unsalted butter
- 175g caster sugar
- 4 eggs
- 1 tsp vanilla essence/extract
- 200g self raising flour
- food colourings - I used pink, red , yellow and orange
- *topping*
- 75g icing sugar
- cold water
- pink food colouring
- edible stars
- Party Ring biscuits
- Pre heat the oven to 180oC / 160oC (fan)
- Grease and line a 22cm Gugelhupf Tin or if you do not own one, a similar sized bundt tin or round tin
- In a large bowl (I use a free standing mixer for this) beat the butter and sugar together until pale and creamy for approx 3-4 minutes
- add the eggs and the vanilla and beat well for a few more minutes
- now add the flour,and gently mix through/fold in
- once this is done, divide the cake batter into 4 equal -ish portions /bowls
- add a little food colouring to each portion of cake batter and mix in
- Now add dollops of each coloured cake batter into your prepared cake tin anyway you like really. You want to create a marble effect once the cake is cooked.
- once all of the cake batter has been used, bake the cake in the oven for 35-45 minutes until cooked right through.
- Leave the cake to cool before turning out onto your cake plate/serving platter and do not add the icing until the cake is cold.
- *icing*
- in a bowl, place approx 50g of the icing sugar and add a few drops of cold water to make a thick paste.
- to the remaining 25g of icing sugar, add some of the pink food colouring and mix well (you might need to add as speck of cold water too to make the paste)
- Pour the white icing sugar over the top your cake
- Next drizzle (either free hand or put the pink icing sugar paste into a piping bag) the pink icing over the top
- Then top with Party Ring Biscuits and the edible stars
- your Party Ring Marble Cake is now ready to serve 🙂
