This easy to make tray bake recipe, uses Weetabix for its base which adds a lovely flavour and crunch. Why to try these Chocolate Weetabix Squares for yourself or get the kids involved in making them.
Having returned from my holiday last week childless as my two boys were having a few days camping with their grandparents, I thought I had better look through my latest Degustabox UK delivery which arrived the week before we went away, and think of a recipe.
Looking through I decided to use the Weetabix with coconut and raisin product.
I wondered if I could make a traybake chocolate and biscuit treat. I found a recipe on the official Weetabix site which sounded really nice, and adapting it slightly to accommodate what I had in my cupboard, I came up with these yummy Chocolate Weetabix Squares.
Despite there being some cooking in the oven, this traybake recipe tastes a little like chocolate tiffin which is a good thing I feel!
These are so easy to make and I love that by using Weetabix , these treats have added fibre and Weetabix goodness inside them.
Here is the recipe for my Chocolate Weetabix Squares.
- 4 Weetabix biscuits (I used the coconut and raisin one)
- 125g self raising flour
- 100g light brown sugar
- 125g unsalted butter , melted
- 75g raisins
- *topping*
- 200g milk chocolate
- Preheat oven to 180 oC / 160oC
- Line a brownie tin approx 28cmx18cm with non-stick baking paper.
- In a food processor add all of the dry ingredients and blitz for about 1 minute so that the Weetabix becomes fine crumbs
- Add the melted butter and raisins and mix to combine
- Press mixture firmly into the prepared tin.
- Bake for 20 minutes.
- Remove from oven and allow to stand until cold
- Remove from the tin
- Meanwhile, melt the chocolate
- Pour the melted chocolate over the cooled biscuit base and spread all over
- Leave to cool and set and then slice and enjoy

What a good idea to use weetabix. I bet they’re delicious. Weirdly, I’ve just made a similar traybake with cornflakes.
